Matvælastofnun hefur lögbundið eftirlit með veiði- og framleiðslusvæðum skelfisks. Það byggist á áhættumati sem er "Fyrirkomulag áhættumiðaðs eftirlits með framleiðslusvæðum og heilnæmiskannanir". Helstu tegundir sem um ræðir er bláskel (kræklingur), ígulker, beitukóngur, sæbjúgu, hörpudiskur, öðuskel, ostrur og kúfskel.
